Stale RO... top off water and sealed Bucket Q's

Well this is a 2 Part question.

I had a friend who accidently either did a water change or did some top off with what he called stale (old?) RO and had his tank crash.

I am assuming that the stale RO meant that it had been sitting in a container for a while.
does this happen? Has anyone heard of RO going stale or bad? how does everyone else avoid using "stale/old" water.

I am in the works of setting up a new 20 gal tank at my g/f's appt. there are a few restrictions. The main problem is the tank is not going to be on a traditional stand, it is going to sit on a Pub table, this is good since i have always liked tanks higher than waist height. But there is no cabinet or space for a sump, canister, equipment or even top off water. Soo, I am thinking of keeping my hoses, extra powerheads, nets, baster and other equipment in sealed Kent Salt Buckets. I think I need them to be sealed since they will be stored in her utility closet which houses her furnace, and water heater. and the smell of burnt gas is in the room and i want to keep the gas/chemicals away from things that may end up in the tank. also in there would be stored the evap top off water either in little aquafina or dejablue type water bottles or in small gas tanks. the small bottles would be ideal b/c to top off for a day would just require pouring a bottle in the filter.

also the utility closet is kept at a decent temp of about 75-80.

So now enough with that Book, Would my equipment be safe from contamination in the sealed buckets, and would/could my Replacement RO go bad in a 1-2 week span?

Mine sits covered for weeks at a time with no problems. I do get a musty smell after a while but I just aerate it for a few hours before use.
