I can't wait to get mine because it will be off to the Amish for jalapeno cheese sausage and deer brats. MMMMMMMMMMM!!!! Congrats btw.

I've never canned meat
I steak out the loins & backstraps, & vac pack them
everything else goes into the grinder for links, italian & bratwurst
hot & mild (both)

I still do the others, but canned vennie is just way good and so versatile. Home late, nothing out of the freezer? No problem. Plus in all my years it seems like frozen meat is great the first three months, then it is OK the next three months. The last six months you eat because it would be a sin to waste it. In the jug it tastes as good two years later as the day it went in.

I don't have any trouble with meat going bad in the freezer, everything is run thru a commercial vac packer, not the wimpy little housewife foodsaver gizmo, I'm always out of prime cuts before May and the links last all summer, I'm down to about 20 packs from last season & I won't start making sausage till after Dec 1

I can come home from work any night, light the BBQ, throw a pack of brats in a sink full of water, by the time the "Q" is hot, links are semi defrosted & ready to grill

deer hamburger is good, helps if you have a good relationship with a local butcher and can get some fat to mix in, then you can make some nice Deer Chilli

I raise a beef every year for the freezer, my butcher is my friend, I spend a lot of money there every year on spices, casings, pork trim, vac bags etc.
I've never been a fan of veinison burger, thats why all except the prime cuts go to sausage
I think we made about 400# last year (for 3 families)

elk, I'll keep more steaks, & make some burger also (with beef suet) as well as sausage from all the trim

What I wish I had is the recipe for Scottish venison pie: involves real pie crust, venison, probably flour for thickening, and Scotch. This is to die for!

Father-in-law does all the steaks but also does jerky and slim jims.

Mmm: inquiry to another site produced some info re venison pie.
1. do a pie crust. lay bottom crust, puncture with tines. Prebake the bottom until golden brown, flaky and crispy.
2. do diced venison in pot slow cooked with a) red wine [or scotch] b) red currant jelly c)couple tsp flour d) mace, pepper, allspice blend, with salt 3) juniper berries optional. Pour into pie crust, layer top crust on, bake until top crust is golden brown.

oooooh, yeah!

And in this house we don't even consider deer good enough to make hamburger out of - mostly what we use deer for anymore is to trade for sausage. Both my dad and brother got their elk a couple weeks ago, they're all cut up and in the freezer already. Over 200lbs of hamburger again! Too bad it doesn't last very long .

We also don't cut much for elk steaks anymore - basically just a few packages for my brother to fry up occasionally for him and the dogs. I don't even like steaks and after having elk steaks for 20 years my dad isn't so much into them anymore . We usually either make jerky out of them or grind them for hamburger.

No deer this year

The hubby did get 3 grouse. Showing off to his cousin that yes indeed, he could take a bird's head off with a 30-06 at 50 yds. 6 tanks of gas, two tires, two shocks and a ball joint. At this rate I could get the game cheaper at Whole Foods.

But I do enjoy the time at home while he's up in the woods playing mighty hunter.

venison burgers are goooooooooooooooood.

sausage should be 90% hoof, nose, hair, ear and tongue or it is not proper sausage.
