I had a picky mantis too, he would only eat live food, wouldn't touch frozen. I always kept a bunch of hermits and snails in the tank and he stayed well fed.

Mantis' are pretty hardy- as long as you water change frequently and don't let ammonia, nitrates, and nitrates get too high I think they should be fine.

What I do as far as feding my mantis is I buy like 20 hermits at a time and just throw them in and then feed as normal, so that way he always has food available and he can excersize his smashers :)
