I'm looking at buying lumenarc reflectors and wasn't sure if I wanted the big ones as it will be a pain to fix them in a canopy. Do the Minis work just as well?

depens on how much area you are trying to cover. i run a full size one over a 4x3 tank with no problems, the light is 20: above the water though. my buddy runs the 3 minis over his 210g and it looks great, no dead spots at all.

This is going to be for 180g with 3 - 250w 14k bulbs.

The full sized offer more flexibility if you ever wanted to switch to 400 watt bulbs. Neither size lends itself well to an install in a canopy.

My mini's fit 400w bulbs no problem. They also fit nicely in a canopy for a 24" wide tank with more then enough room to hang four 4' T5's. If you go with the full size you will be very cramped for space unless your tank is 30" wide.

You won't have any dead spots with 3 minis over a 180.

How about a 220?

The Lumenarc is designed to cover up to a 48" x 48" area as it was designed for growing plants. Most reefers use it comfortably to cover a 36" x 36" area of their tank. The mini comfortably covers a 24" x 24" area. If you have a tank that is in-between, you can choose either really, just depends on how much room you have.
