View Full Version : EASY muffin recipe's...HELP!

OK....so when I was in home-ec back in about the 7th or 8th grade, we had a recipe for these awesome *EASY* muffins! I had that recipe memorized, I bet for 6-7 years after we made them. I wrote the recipe down for my Gramma back in the day, we made them everytime I went to Gramma's house.
Gramma passed in 1990, the last time I had a copy of this recipe was probably 1992 or so...Neither my mom or I can find it.
OK....so...I need some help...I am making this cool scrapbook recipe book for my mom of *OUR* favorite recipes as I was growing up. Mom has NO CLUE where the recipe is, and I would like to find a close comparison recipe.
OK...all I remember is that there was probably less then 4-5 ingredients. I remember baking powder, that's it. Probably some sugar, too.
They were some awesome little muffins, very plain, too.
Anyone have some old plain jane muffin recipe's that might be close to what I am asking...I know this is a LONG SHOT!

1 Martha White Muffin Mix (flavor of your choice) $0.68@wal-mart
1/2c milk
mix and bake, doesn't get much more simple :)
unfortunately i know this isn't what your looking for

Look for baking powder bisquits. There's almost always salt also.

yeah, wasn't was I was looking for...this was a simple recipe for HOMEMADE muffins, but thanks.....

milk, eggs, flour, sugar and oil are about as simple a muffin as one can make, just not the most tasty. if you use self-rising flour you cut out all those extras like the baking power/salt/vinegar/etc...

OK, now I do remember there being salt too! I looked that up and it seems I'm getting close! Maybe an egg too!

Baking Powder Bisquits
1/4 cup shortening
2 cups flour
1 Tablespoon sugar
1 Tablespoon baking powder
3/4 cup of milk
1 teaspoon salt
Mix dry ingredients, and cut shortening into them.
Mix in milk, knead lightly. Pat out about 1/2" thick cut and bake at 450 degrees for 10-12 minutes.

I found this too....this seemed closer, I guess....something about the *shortening* - I know that wasn't an ingredient! THANK YOUUUUUUUUUUUUU!
Easy Muffins
1 egg
3/4 cup milk
1/2 cup vegetable oil
2 cups all-purpose flour
1/3 cup sugar
3 teaspoons baking powder
1 teaspoon salt
Heat oven to 400 F. Grease bottoms only of about 12 medium muffin cups, 2 1/2 x
1 1/4 inches.
Beat egg stir in milk and oil. Stir in remaining ingredients all at once just until flour
is moistened (batter will be lumpy). Fill muffin cups about 3/4 full.
Bake until golden brown, about 20 minutes. Immediately remove from pan. About
1 dozen muffins.

12 1/2 ounces cake flour
1 teaspoon baking soda
2 teaspoons baking powder
Heavy pinch salt
1 cup sugar
1/2 cup vegetable oil
1 egg
1 cup yogurt
1 1/2 cups fresh blueberries
Vegetable spray, for the muffin tins
Preheat oven to 380 degrees F.
In a large bowl sift together the flour, baking soda, baking powder, and salt and set aside.
In another large bowl, whisk together the sugar, oil, egg and yogurt. Add the dry ingredients reserving 1 tablespoon of the dry ingredients and toss with the blueberries. Stir mixture for a count of 10. Add 1 cup blueberries to mixture and stir 3 more times. Reserve the 1/2 cup of blueberries.
Using a #20 ice cream scoop, add the mixture to greased muffin pans. Sprinkle the remaining 1/2 cup of berries on top of muffins and press down lightly. Place into the oven and increase the temperature to 400 degrees. Bake for 20 to 25 minutes, rotating pan halfway through. Remove from oven and turn out, upside down on tea towel to cool completely. Serve immediately or store in airtight container for 2 to 3 days.
LOL, no shortening huh? :D Have yet to see a plain muffin recipe in the cookbooks I've looked at.

The one and ONLY cookbook I own that would have even come close is my Joy of Cooking cookbook and I can't find it!!!
LOL, I don't have a Joy of Cooking! I have about 99 other ones tho. Here's out of BH&G cookbook
1 3/4 cup flour
1/3 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 beaten egg
3/4 cup milk
1/4 cup cooking oil
400 degrees at 20 minutes

I will do some research and get back to you. The main ingredients will include:
butter (or another fat - oil, shortening)
sugar
egg
flour
rising agent(baking powder, baking soda)
salt
After that if you want "non-plain" you add flavor (vanilla, extracts, fruit, etc.)
O.k. I admit I started out college as a Chem. E. and never lost the love. Now I express myself through baking (and of course kicking the living daylights out of a punching bag). :)

That's what I call a domestic emergency. Of the dozen or cook books I have it is the one I reference the most. It's so used it's starting to fall apart.

I have a copy of the original Fannie Farmer book (some where in this house!) from the 1890's. My next step is to try and find that copy and look for muffin recipes.
From my well worn copy that I taught myself how to cook with, I found this recipe:
Basic Muffins:
(12 muffins)
2 cups white flour
3 tsp. baking powder
1/2 tsp. salt
2 tbs. sugar
1 egg, slightly beaten
1 cub milk
1/4 cup melted butter
Preheat the oven to 375F. Buttter muffin pans (I'll bet you could use muffin liners). Mix the flour, baking powder, salt, and sugar in a large bowl. Add the egg, milk, and butter, stirring only enough to dampen the flour; the batter should NOT be smooth. Spoon into the muffin pans, filling each cup about 2/3 full. Bake for about 20-25 minutes.
Is this close to what you remember?

1 cup warm milk
1/4 lb. butter, melted and cooled slightly
Preheat oven to 400oF. Sift flour, sugar, baking powder, and salt together. Mix the eggs, milk, and butter; add to dry ingredients, stirring only until the flour is moistened. Spoon into well-greased muffin tins. Bake ~20 minutes and serve immediately.
So are the muffins done yet? :D

I wasn't making them tonight! I am making a scrapbook for my mom of *our* favorite recipes as a family. But...I may have to try these out before I put a recipe in the recipe scrap book!!!
