If you set the CA reactor perfectly at start up as the CACo3 source is used won't you need to readjust it?

Will someone please explain this to me?

I am not sure I understand the question, but a CO2-driven calcium reactor does require a lot of adjusting, according to some people who've given talks about them. In general, yes, as the media dissolves, the surface area can decline, but it's a slow process.

I don't use Ca reactors, so I can't help further.

So there really arn't any " set it and forget it" reactors?
This is keeping me up at night. It is currently 1:39 AM and I have been thinking about this for the past 5 hours.

Nope, not as far as I understand the situation. I'm not sure how frequently they need to be checked, though. I'm sure you'd get a wide range of answers.

There are no set and forget reactors. Every system is going to have a different demand for calcium and alkalinity and would require a different adjustment. A reactor needs to be tuned to meet the demand of the system it is being used on. These demands will also change as corals grow, new animals are added ect.
