I want to buy a RO-DI filter on ebay and the sediment filter is 5 micron for a good price. Is a 1 micron sediment filter better then a 5 micron filter and what is the difference

Yes, a 1 micron is better than a 5. A 1 micron filter will filter everything down to 1 micron. You will get clearer water with a 1 micron fliter. If your RO has 2 prefilters I would use both, the 5 micron first and the 1 micron after it.

The difference? 4 microns. (sorry, couldn't resist)
The 1 micron filters out particles down to 1 micron. The 5 micron will filter to particles to 5 microns.
If a particle is say 3 microns, it will pass though the 5 but not the 1.
1's will clog up faster because the stop more stuff.

can you upgrade the 5 mircon filter with a standard 1 micron filter or are the RO/DI filters not interchangable

A lot of them are interchangeable, depends on the brands in question.
If you have a lot of particulates in your water (as I do), you might want to consider using both 1 and 5 micron filtration via an add-on canister. That's what I'm going to do.

Chweck out filter array on www.airwaterice.com they explain it really well.

Which one of the RO-DI units would give me the best water quality. The Filter Direct 6 stage unit or the air water ice Typhoon III.

The sediment filter is to protect the membranes as well as the carbon if you use city water. You normally have a rough filter for the big particles and the tight filters afterwards to remove the small particles. You don't want to clog up the fine filter with heavy material. I would even go to a .5 micron for a pre-filter. All you are doing is making pre-treatment water for the RO. The better you protect the RO, the longer it will last. FilmTec is a quality Membrane also. Look at the inside of the pre-treated filters as well over time. The change out should be before you see breakout on the inside of the filter, looking at the filter on the edge.
