Tis the season to start picking my tomatoes from the garden. Usually i just slice them and make a sandwich with mayo( hellmans) salt pepper cheese and a little dill and basil.
Any other recipes you people have that i can try. Not much you can do with tomatoes but i have 12 plants. I have the filling that i will have a lot of tomatoes on my hands.

Pizza Margarita
Make or buy pizza dough and roll it fairly thin
Dice tomatos and spread liberally on the pizza skin
Spread whole fresh basil on top of the tomatos
Sprinkle salt and pepper over entire pizza
Drizzle with GOOD olive oil
scatter pizza with pieces of fresh whole milk mozzarella
Back at 400 until done (preferably on a pizza stone)
Open a bottle of your best Zin
Eat, drink, repeat

Even better, do it right on the grate of a gas or charcoal grill. No better way to give it that rustic, smokey flavor.
IMHO tomatoes are about the most versatile garden product out there. Pizza, sandwiches, sauces, salads, canning, etc.

Sauces are good because you can freeze them. I use mine to make spaggheti sauce, pico de gallo and mainly I just eat them raw with salt, alot of them don't even make it out of the garden because I like them raw the most. Spaggheti sauce can last for months in the freezer, pico de gallo is good for a week. Next time plant fewer tomatoes. I planted 4 and I have just about as much as I can keep up with. What varieties did you plant? Next time plant Indeterminate varieties or Semi Determinate, these give you more fruit over a long season instead of all at once like Determinate varieties which are the earlier ones. I made the same mistake with cucumbers, who knew 3 plants would produce 50+ cucumbers!

We actually freeze a pile of tomatoes every year. Dip them in boiling water, remove the skins and freeze them whole in small ziploc bags. Works like a champ.

How long do they last frozen with that method?

We use them all year long. Once frozen they work fine for cooking but get kinda soft for use as "fresh tomatoes."

I have big boy, jet, and beef steak along with the big sweet cheery tomatoes.
I hear you on the cucumber plants. I planted 9 plants. There are so many i cant believe it.
I plant so much because i give to my family and neighbors.
Love the pizza receipe. Gonna try it this weekend.

When I was a wee young boy, my brothers and I used to take the extra, overgrown, or rotten cukes and zucs from my mom's garden and shoot them with our 410 gauge shotgun. You've never seen anything till you've seen a cuke explode into a cloud of pulpy mist!
Love the pizza receipe. Gonna try it this weekend.
Once you've had a pizza made with fresh tomatoes, herbs, and moz, you won't be able to eat it any other way.

Yeah, I trade with my neighbors and give them away to friends and family but it is still alot. My neighbors grow all sorts of perennial herbs and bell peppers and I grow the spicy peppers, banana peppers, tomatoes, cucumbers and sweet corn. All those varieties are Indeterminate IIRC. Alot of the newer dwarf ones are Determinate which set all the fruit at once so it is alot to deal with. Those were developed for farmers to harvest all at the same time.
Here's a great recipe for Tomato Pie that I made several times for French class whenever we had food days (it's not really French, but it's close enough with Provençal style ingredients ...so...):

4 tomatoes, peeled and sliced
10 fresh basil leaves, chopped
1/2 cup chopped green onion
1 (9-inch) prebaked deep dish pie shell
1 cup grated mozzarella
1 cup grated cheddar
1 cup mayonnaise
Salt and pepper
Preheat oven to 350 degrees F.
Place the tomatoes in a colander in the sink in 1 layer. Sprinkle with salt and allow to drain for 10 minutes.
Layer the tomato slices, basil, and onion in pie shell. Season with salt and pepper. Combine the grated cheeses and mayonnaise together. Spread mixture on top of the tomatoes and bake for 30 minutes or until lightly browned.
To serve, cut into slices and serve warm.

I sort of messed around with this recipe, and I found that if you add alot of feta to the layers as well, it comes out even better. On the topping, I am usually a little more conservative with the mayonaise, so that the topping doesn't come out so rich. I also like to add alot of fresh ground pepper to the topping before baking. Saute those babies in some butter, garlic, and with some diced pablano chiles, onions, and toss over some pasta with a heap of fresh regiano cheese.

Green tomatoes
1 1/2 cups flour
1/2 cups cornmeal
1/2 teaspoon salt
1/2 teaspoon pepper
Milk
1 1/2 cups vegetable oil
Select the greenest tomatoes available. Wash, remove stem, and slice into 1/4-inch slices; place in bowl or platter. Mix flour, cornmeal, salt, and pepper just enough milk to make a thick batter (the consistency of pancake batter). Heat oil in skillet over high heat: reduce heat to medium-high. Dip tomato slices into batter, wiping against bowl to remove excess batter, and place in hot oil. When browned on both sides. drain on paper towels.

Here in upstate NY, tomato pie basically means cold pizza with no cheese on it. I find it revolting, but the recipie you suggested sounds pretty good.

Another quick, easy and tasty veggie pizza recipe:
Boboli pizza crust (or your own pre-cooked)
sliced tomatoes, cover entire crust
fresh basil, torn up
chopped red onion
capers
crumbled feta cheese
Put items on in order listed and cook per the Boboli instructions, approx. 10 minutes.
Enjoy...

On the rare ocassion I get fresh tomatos, I like tomato soup and grilled cheese sandwiches. Fresh tomato soup is so good. I blanch and peel. cut up, sometimes seed, depending on who's eating it. Heat the tomatos up with a can of chicken stock. Add 1 tsp of baking soda (must have large pan as this makes it foam, a lot!) Have milk heated separately, and pour into tomatos after the foaming stops.

Yeah I made the pizza recipie last night too- forget dominoes and pappa johns!!!! Simply incredible!!! And even better with the wine - instead of zin, girlfriend and I had a bottle of merlot.
