I use CaO, but for most purposes, it makes no real difference.

One important difference is that CaO gets hot when it first gets wet (becoming Ca(OH)2 ). It can get very hot if there is a lot of it. One person melted his new Nilsen reactor this way. :(

In short, as soon as CaO gets wet, it becomes Ca(OH)2.

how about pH ? same or not with Ca(OH)2 ?

The pH effect will be the same as long as a saturated solution is used.
