I will be using LR in my aquarium to act as my sole bio filtering mechanism. In general, what is the minimum I would need to ensure my bio filtering is adequate?

The general rule of thumb is "1 - 1.5#'s LR per gallon of water". So in your case, I would recommend at least 125#'s and up to 200#'s.
