Which Euro-reef?

I have an overstocked 75 G, with a 3-4" blue angel, 6" pink-tail trigger, 5" marroon clown, 6" lunare wrasse. Thinking about the ES5-2, ES5-3 and the CS6-1 (or ES6-1).

Any thoughts?

Well, I just assembled my 90g AGA tank, and I got one of the 6-2+ units via h2otropicals.com as a blem unit for a really good price (approx $260 after shipping). I wanted the 6-2+ because it was rated for slightly more than my tank size and it had the upgrade to the Sedra 5000 pump in it. It's great and it fits in AGA's stand thankfully :-)

The biggest one you can afford and fit into your sump. It's almost never the wrong choice in terms of protein skimmers to get an overrated unit.
