Can one use carbon to help keep ammonia in check?

I don't think carbon will help with ammonia that much if any at all. You really need the bacteria that consumes ammonia to build up and do its job to bring ammonia levels down. It's just all part of the wonderful saltwater cycle.

Actually, if you're using a power filter on your tank, you should run it without any filter media at all. The media just helps to produce extra nitrates which you definitely don't want in your tank. If you ever need to add medications to your tank (hopefully never), then you can put carbon in your filter to remove the medication when your fish are cured. Hope this helps!
