Just curious what method you guys use. I seem to remember someone mentioning a tool that does it for you. Anyone know anything about that?

It depends on if you are talking about on a piece of paper or an object. They make a center finder for finding the center of a cylindrical object. You can find these at most woodworking places.

I'm taking about finding it on an object, specifically a acrylic circle, needing a hole in the exact center.

here is a link to a site that shows how. There is another way that I cant remember that uses a framing square.

Wait I did find it and you don't need anything special

Construct any three points on the circle. Draw the segments, forming a triangle, who's vertices are on the circle. Construct perpendicular bisectors on the sides. All three perpendiculars intersect in the center of the circle. You only need two of these to find the center.
