According to dictionary.com it's "pol-ips".
Phonetically spelled it would be pronounced "PAUL IPS" per the pronunciation key from this source.
I have heard it pronounced "POLE IPS" and I believe this is incorrect and dictionary.com seems to back that up.

I pronounce it - those little round things with wild lookin centers, or those brown ones, or those green things in the corner. Just think of scallops but with a P instead of the sc.

... and what exactly does this term refer to?
My understanding is that it is not one thing but a group of things that look like stems with a button, or flower looking head...
which there are tons of different types.
is this correct?

I'm a "paw-lip" guy.
Here's a funner pronunciation setup for you. I pronounce various corals with the same symbol structure as below...
Acro-por-a
Mon-ti-por-a (or Monti-por-a)
Mille-por-a
I've met a couple people that pronounce them as follows:
A-crop-ora
Mon-tip-ora
Mill-ep-ora
Though it is the same word, it sounds so out of this world.
Ack-row-pore-uh versus Ah-crop-or-uh
Monty-pore-uh versus Mon-tip-or-uh
