It's your choice. Some people spoon out the ganache, chill it, then roll it in cocoa. Or, you can dip them in tempered chocolate, or you can use molds: paint the inside of the mold with covering chocolate (or tempered chocolate. Chill the mold, then add the ganache when it's about 85-87 degrees. Chill, then add the covering chocolate to the bottoms. Chill again, then invert on some wax paper. We used molds, so every flavor has its own shape. Also, you can use dark chocolate for the molds, and highlight with white chocolate (or any other color you choose).

Debi, I don't understand how you use the irons to deep fry the cookies. I'm confused.

LOL, I'm always confused Les! You put the iron in the hot grease. Let it get real hot. then take the iron out of the grease, dab it on a paper towel and dunk it in the batter. It cooks on the iron. You then put it back in the grease to cook the whole cookies. the underside is hollow. They're pretty delicate. You get a knack of getting the cookies off the iron after awhile and the older your iron the easier it is. Some of mine are over 25 years old.

That HUGE palm tree behind it makes that Xmas tree come to life, Todd!! LOL!

OK, I gotcha now on the cookies, Debi...couldn't see that *detail* in the first pic, that they were fried.

As for truffles...can't you just put the middle stuff (grenache, as you call it) in a tiny papercup thingy (like a resee's peanut butter cup) and then pour chocolate over the top?

As for cookies and that kind of stuff...I can barely bake the pre-made ones you just throw on the pan and bake....

Oh, you have no idea how close I was to just putting lights
on that palm tree. I was getting frustrated with the fake tree. Heck I even took it down once and re-put it up.

Uh, we had a fake tree here that was left up in the apartment, so I thought *Why not, let's use it this year*, so I tried to put it together and branches were missing, it looked bad and I realized that it wasn't going to work! Too many of one branch and not enough of the other...

Soooooooooo...we bought another fake tree, a really nice one and when putting it together, I figured out what was wrong with the old tree....I WAS PUTTING IT TOGETHER UPSIDE DOWN!

I felt your pain, Todd!

Speaking of *dying*...I think I am, can you send me cookies?

Seriously, I have had the WORST migraines the last 2 days, to the point where I feel like I have the flu and I am achy sick....I literally layed on the couch for 6 hours yesterday watching tv. I don't really have the flu, but my headaches make me feel like I do.
