Expansion of the polyps like they are filled up with water. If they are not healthy they will get smaller and smaller until they die. If they are gradually getting bigger then they are happy and healthy..

Wheres there placement? How the flow ? whats your readings , like calcium , phosphate and amonia ?

Corals, along with the vast majority of other living creatures, are incapable of the human emotional state known as "happy." Suggested reading: anthropomorphism.
Now, what does a healthy specimen of euphillia look like? Google is your friend. Also searching RC should get you a million or so hits for euphilla, hammer coral, frogspawn, etc. Additionally, the best time to research the needs and health signs of a particular coral would be before you have said coral in your tank.
