David's Nice Hot Crispy Tasty Taco's-

Chop and sautee red onions, green/red/orange/yellow peppers.

Add chopped green onions and jalapeño peppers toward the end. of the sauteeing. Set aside.

Brown ground sirloin. Pour off any grease.

Add 2 cups of water, chili powder, garlic powder and cayenne pepper to taste. Add sautee'd veggies. Add a can of jalapeño diced tomatoes and a can of spicy chili beans. Bring all that to a boil and then let simmer for about an hour or two - until all the water is gone.

I make several different varieties and it's different every time.

This is a current favorite.

1(ish) lbs of lean ground pork
1/4 lbs of mexican chorizo (not cured)
1 yellow onion
cilantro
cumin
diced jalapeños
Queso Fresco
some orange juice
juice of one lime
salt and pepper

In a pan, mash up and saute the chorizo for 10 minutes.
drain the chorizo but don't wipe out the pan.

dice the onion and saute it with a little salt and pepper
add the diced peppers
once the onion clears, add the ground pork and brown.

Once the meat is browned, drain the grease off and add the chorizo back into the pan.

Add about 1tbls cumin and about 3 tbls of chopped fresh cilantro
add 1/4 orange juice and the juice of one lime.
salt and pepper to taste.
simmer until the moisture level looks right.

Lightly fry some corn torillas (not quite crispy)

Serve the tacos with some sliced romaine lettuce and crumbled Queso Fresco (and a good mexican beer)
