Color: most people tend to choose white (closer to sand color I guess). I choose black, because like black sand, I find that it brings out the color contrasts better.
Size: I strongly suggest you get it "slightly" smaller than the footprint, so that you can vacuum up the crap that deposits in the "gutters". I made sure that the airline vacuum can fit in the gutter to suck up all the detritus.
