polyurethane is the best choice, they make a water base polyurethane for less odor and easy cleanup.
The lights should have nothing to do with it, not sure what your concern is. No coating...

better plywood
the depot stuff is just cheap and has voids. try Timber hardwoods on southern between stapley/mesa in mesa.
you don't need "marine" plywood, just seal it with a coat of polyurathane.
