I've been hearing "Cleaner Clams(Little Necks etc.), Mussels and oysters" will eat nitrates as that is their diet. I'm not too sure about oysters though.

When everything is set up lights on and all powerheads rolling. You might wanna add a piece of raw shrimp or so to get the ammonium levels up so the bacteria can start growing faster.

What is your dKH of the water? It should be about 8-12 dKH to maintain a good pH range. If your dKH is in the good range. Then like said above just get some good gas exchange into your aquarium...

I'm not sure you should look into their warranty if you are going to buy. I bought my tank with lifetime warranty so my 29gallon should be sturdy.

Are you running a seaclone protein skimmer? A lot of ppl say those do poorly in the Aquariums especial spitting out a lot of microbubbles back into the tank.
I recommend running an AquaC Remora....

With my 3 Scarlet legged hermits they are fine. Just make sure they get food to the bottom also if theres not enough algae. This will keep them saticfied

By the way if you choose to raise Alkalinity make sure to bake your baking soda in the oven. I forgot what this eliminates its some kind of gas. But make sure to bake it about 250Degrees or so.
