water parameters/dosing
 
what else is important to me besides what the API test kit tests?

ammonia/nitrite/nitrate/pH - and I test salinity, calcium, and KH

is there more to this? What should I be dosing my tank with to keep hardness where I want it (im using tap water now but switching to RO/DI this week, its on the way)

im just looking for any random thoughs on the topic...

if you are planning on keeping inverts, there is a secondary set of tests that become beneficial but not really needed in a FOWLR set up.

If inverts are on your radar, you may want to consider phosphate and magnesium test kits too.

this is good, thanks! test kits are great, however once I find a deficiency, what do I do about it!!

once you identify a deficiency, a 2 part process has to start: Part 1 is to understand why and where the deficiency is probably coming from. Part 2 is then to remedy the deficiency. Prevention is proactive and should be what you strive for.
